Roast the Vegetables
Preheat the oven to 400°F (200°C). Cut the tomatoes in half and place them on a baking sheet. Peel and quarter the onion, and add it to the sheet along with the peeled garlic cloves. Drizzle with olive oil and season with salt and pepper. Roast for 25-30 minutes until the tomatoes are soft and slightly caramelized.

Blend the Soup
Add the roasted vegetables to a blender or food processor, along with the vegetable broth, fresh basil, and balsamic vinegar. Blend until smooth. If the soup is too thick, add more broth to reach desired consistency.

Heat the Soup
Pour the blended soup into a pot and heat over medium heat until warmed through, about 5-10 minutes. Adjust seasoning with salt and pepper to taste.

Serve
Ladle the soup into bowls and serve hot with garlic bread on the side.
