    Prepare the Batter

    In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the red ale until smooth. Set aside.

    Prepare the Potatoes

    Peel and cut the potatoes into thick fries. Rinse under cold water to remove excess starch, then pat dry with a towel.

    Fry the Potatoes

    Heat oil in a deep fryer or heavy pot to 180°C (350°F). Fry the potato sticks in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels. Season with salt.

    Fry the Seafood

    Dip the prawns and cod fillets into the batter, allowing excess to drip off. Carefully place in the hot oil and fry for about 4-5 minutes until golden and cooked through. Remove and drain on paper towels.

    Serve

    Serve the fish and chips hot with tartar sauce and spicy remoulade on the side.
