    Prepare the Bacon Jam

    In a skillet over medium heat, cook the bacon until crisp. Remove and drain on paper towels. In the same skillet, add diced onion and sauté until translucent. Add the cooked bacon back to the skillet along with brown sugar, apple cider vinegar, and thyme. Cook for another 5 minutes until thickened. Set aside.

    Prepare the Bone Marrow

    Preheat the oven to 450°F (230°C). Place the bone marrow bones cut-side up on a baking sheet. Drizzle with olive oil, and season with salt and black pepper. Roast in the oven for about 15-20 minutes, or until the marrow is bubbly and slightly browned.

    Grill the Bread

    While the marrow is roasting, grill the slices of bread until golden and crisp on both sides. You can brush them with a bit of olive oil for extra flavor.

    Assemble and Serve

    Once the bone marrow is done, remove from the oven and let it cool slightly. Serve the marrow in the bone canoes with a generous spoonful of bacon jam on top, alongside the grilled bread for spreading.
