Method

Preparation of Gelato Base

    Heat Milk and Cream

    In a medium saucepan, combine whole milk and heavy cream. Heat over medium heat until steaming, but do not boil.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together egg yolks and granulated sugar until pale and thick.

    Temper the Egg Mixture

    Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent curdling.

    Cook the Custard

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.

    Add Flavor and Cool

    Remove from heat, stir in the vanilla extract and your chosen flavor ingredient. Let the mixture cool to room temperature, then refrigerate until fully chilled.

Churning and Freezing

    Churn the Gelato

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

    Freeze Until Firm

    Transfer the churned gelato to an airtight container and freeze for at least 4 hours or until firm.
