Steak Preparation

    Season the Steak

    Pat the NY strip steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steak

    Heat olive oil in a cast-iron skillet over high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, depending on thickness. Remove from heat and let rest.

Herb Butter Preparation

    Make the Herb Butter

    In a bowl, mix the softened butter, parsley, chives, minced garlic, and lemon juice until well combined. Shape into a log using plastic wrap and refrigerate until firm.

Pommes Frites Preparation

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat the potato strips dry. Fry in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels, then sprinkle with salt.

Serving

    Serve the rested steak topped with a slice of herb butter alongside a generous serving of pommes frites.
