Soup Preparation

    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deep golden brown, about 30-40 minutes.

    Add the minced garlic and cook for an additional 2 minutes. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes. Remove the bay leaf before serving.

    Prepare the Croutons

    Preheat your oven to 375°F (190°C). Slice the baguette into 1-inch thick slices. Brush each slice with olive oil and sprinkle with garlic powder. Place on a baking sheet and toast in the oven for 10-15 minutes until golden and crispy.

    Ladle the hot soup into bowls, top with toasted croutons, and sprinkle generously with grated Gruyère cheese. Place the bowls under the broiler for 2-3 minutes, until the cheese is bubbly and golden.
