Prepare the Mussels
Rinse the mussels under cold water and remove any beards. Discard any that are open and do not close when tapped.

Add Wine and Thyme
Pour in the white wine and add fresh thyme leaves. Bring to a simmer.

Cook the Mussels
Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels open. Discard any that do not open.

Prepare the Sauce
In a small bowl, whisk together the light mustard and heavy cream. Once the mussels are cooked, stir in the mustard cream mixture.

Season and Serve
Season with salt and black pepper to taste. Serve immediately, garnished with additional thyme if desired.
