    Season and Roast the Ribeye

    Preheat the oven to 400°F (200°C). Season the ribeye steak liberally with salt and black pepper. Place it on a roasting pan and cook in the oven for 30-40 minutes, or until the internal temperature reaches medium-rare (130°F/54°C). Remove from the oven and let it rest for 10 minutes before slicing.

    Prepare the Au Jus

    In a saucepan, heat the beef broth over medium heat. Allow it to simmer for about 10 minutes to reduce slightly and concentrate the flavors.

    Prepare the Pommes Frites

    While the ribeye is roasting, fry the pommes frites according to package instructions or prepare homemade fries. Keep them warm until serving.

    Assemble the French Dip

    Slice the ribeye thinly and place the slices on the French rolls. Top each sandwich with Gruyère cheese and a dollop of horseradish. Serve the sandwiches with a side of hot au jus for dipping, alongside the pommes frites.
