    Prepare the Gai Lan

    Rinse the gai lan under cold water and trim the ends of the stems. Cut the gai lan into manageable pieces, about 3-4 inches long.

    Make Crispy Garlic

    Peel and thinly slice the garlic cloves. Heat olive oil in a pan over medium heat and add the garlic slices. Sauté until golden brown and crispy, then remove and set aside on a paper towel to drain excess oil.

    Sauté the Gai Lan

    In the same pan with the garlic oil, add the gai lan and sauté for about 3-4 minutes until the leaves are wilted and the stems are tender but still crunchy.

    Add Seasoning

    Add the vegan XO sauce, salt, and black pepper to the gai lan. Squeeze the juice of the lemon over the greens and toss well to combine.

    Serve

    Plate the sautéed gai lan and top with the crispy garlic. Serve immediately as a side dish or main course.
