Method

Cooking the Rib Eye

    Prepare the Steak

    Season the rib eye steaks with salt and black pepper on both sides. Heat olive oil in a skillet over high heat.

    Sear the Steak

    Add the steaks to the skillet and sear for 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

Making Pomme Purée

    Boil the Potatoes

    Peel and chop Yukon Gold potatoes. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain and return potatoes to pot. Add heavy cream, butter, and salt. Mash until smooth and creamy.

Roasting Vegetables

    Prepare and Roast

    Preheat oven to 400°F (200°C). Chop carrots, parsnips, and beets. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes until tender.

Making Horseradish Cream

    Mix Ingredients

    In a bowl, combine prepared horseradish, sour cream, lemon juice, and salt. Mix well and adjust seasoning to taste.

Making Natural Jus

    Prepare the Jus

    In the same skillet used for the steak, add red wine and beef stock. Simmer until reduced by half. Add fresh thyme and salt to taste.
