Preparing the Prime Rib

Season the Roast
Preheat the oven to 450°F (232°C). In a small bowl, mix together the kosher salt, black pepper, minced garlic, chopped rosemary, and olive oil. Rub this mixture all over the prime rib roast.

Roast the Prime Rib
Place the seasoned prime rib in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 hours or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let it rest for 20 minutes before slicing.

Make the Purée
Add the heavy cream, butter, and salt to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
Roasting the Root Vegetables

Prepare the Vegetables
Toss the prepared carrots, parsnips, and beets with olive oil, salt, and black pepper in a large bowl.

Roast the Vegetables
Spread the vegetables on a baking sheet and roast in the oven for 30-35 minutes until tender and caramelized.
Making the Horseradish Cream

Mix the Cream
In a small bowl, combine the prepared horseradish, sour cream, lemon juice, and salt. Mix well and adjust seasoning to taste.
