Method

Prepare the Lamb

    Marinate the Lamb

    Preheat your oven to 180°C (350°F). In a small bowl, mix together minced garlic, chopped rosemary, olive oil, salt, and pepper. Rub this mixture all over the leg of lamb and let it marinate for at least 30 minutes.

    Roast the Lamb

    Place the marinated lamb leg in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until it reaches your desired level of doneness. Baste occasionally with the pan juices.

Prepare Pomme Purée

    Cook the Potatoes

    Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Purée

    Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt to taste.

Roast the Vegetables

    Prepare the Vegetables

    Peel and chop the carrots, parsnips, and beetroot into equal-sized pieces. Toss with olive oil, salt, and pepper.

    Roast the Vegetables

    Spread the vegetables on a baking sheet and roast in the oven for about 30-40 minutes, or until tender and caramelized.

Make the Jus

    Combine Ingredients

    In a saucepan, combine lamb drippings, red wine, chopped mint, and rosemary. Bring to a simmer and reduce until slightly thickened. Season with salt and pepper to taste.
