Preparation

    Prepare the Vegetables

    Chop the carrots and celery into even pieces and slice the wild mushrooms.

    Season the Steak

    Rub the flank steak with olive oil, minced garlic, salt, and black pepper. Let it sit at room temperature for 30 minutes.

Cooking

    Sear the Steak

    Preheat the oven to 400°F (200°C). In a large skillet over medium-high heat, sear the flank steak for 3-4 minutes on each side until browned.

    Add Vegetables and Roast

    Remove the steak from the skillet and set aside. In the same skillet, add the carrots, celery, and mushrooms, cooking for 2-3 minutes. Place the steak on top of the vegetables and add rosemary. Pour red wine and beef broth into the skillet. Transfer to the oven and roast for 20-25 minutes.

    Rest and Slice

    Remove the skillet from the oven and let the steak rest for 10 minutes before slicing against the grain.

Serving

    Make the Jus

    While the steak rests, place the skillet on medium heat, scraping up any browned bits. Simmer for 5-10 minutes until slightly thickened.

    Plate the Dish

    Serve the sliced steak with the roasted vegetables and drizzle with the red wine jus.
