Preparation of Salmon

Season the Salmon
Lightly season the King Salmon fillet with smoked sea salt and black pepper on both sides.

Smoke the Salmon
Using a stovetop smoker or grill, lightly smoke the salmon fillet over low heat for about 10-15 minutes, or until cooked to your preference.

Assemble the Dish
On a plate, place a generous scoop of sautéed fava beans, top with the smoked salmon, and arrange the sautéed chanterelles on the side. Garnish with shaved black truffle and microgreens.
