Pasta Preparation

    Make the Pasta Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll and Cut the Pasta

    After resting, divide the dough into four pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin. Cut the sheets into ½ inch wide strips to form tagliatelle.

Salad Assembly

    Prepare the Salad

    Chop the cucumbers and bell peppers into bite-sized pieces. In a large bowl, combine the feta, olives, cucumbers, bell peppers, and beef prosciutto.

    Make the Dressing

    In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.

Cooking the Pasta

    Cook the Tagliatelle

    Bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 3-4 minutes until al dente. Drain and set aside.

Serving
