Prepare the Beef
Finely dice the beef tenderloin into small cubes and place in a mixing bowl.

Add olive oil, salt, and black pepper to the beef and mix gently to combine.

Prepare the Caper Berries
Chop the caper berries roughly and add to the beef mixture.

Prepare the Parmesan
Grate the parmesan cheese and set aside.

Toast the Sourdough
Toast the sourdough slices until golden brown and crispy.

Assemble the Tartare
On a plate, form the beef tartare mixture into a mound. Top with smoked egg yolk and sprinkle grated parmesan cheese on top.

Serve the beef tartare immediately with toasted sourdough on the side.
