    Prepare the Mojo de Ajo

    In a blender, combine the garlic cloves, olive oil, chili paste, lemon juice, and a pinch of salt and black pepper. Blend until smooth and set aside.

    Cook the Petit Potatoes

    Boil the petit potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.

    Marinate the Salmon

    Brush the salmon fillets with the mojo de ajo mixture and let them marinate for at least 30 minutes.

    Torch the Salmon

    Heat a grill or a skillet over medium-high heat. Cook the marinated salmon for about 4-5 minutes on each side, or until cooked through. Alternatively, you can use a kitchen torch to char the salmon for a smoky flavor.

    Serve

    Plate the torched salmon with boiled petit potatoes and garnish with fresh cilantro. Drizzle with any remaining mojo de ajo.
