Preparation of Crispy Potatoes

    Preheat and Chop

    Preheat the oven to 200°C (400°F). Wash and peel the potatoes, then cut them into small cubes.

    Season and Roast

    In a bowl, toss the potato cubes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden and crispy, stirring halfway through.

Making Croque Madame

    Assemble the Sandwich

    In a skillet, melt 1 tablespoon of butter over medium heat. Place one slice of bread in the skillet, layer with Black Forest ham and Gruyère cheese, and top with the second slice of bread.

    Cook the Sandwich

    Cook for about 3-4 minutes on each side until golden brown and the cheese has melted. Remove from heat and keep warm.

    Fry the Eggs

    In the same skillet, melt the remaining butter and fry the eggs sunny side up. Season with salt and pepper.

    Serve

    Place the sandwich on a plate, top with the fried egg, and serve alongside the crispy potatoes.
