Method

Preparing the Polenta

    Cook the Polenta

    In a large saucepan, bring the water to a boil. Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Reduce heat to low and cook for about 20-25 minutes, stirring frequently until thickened.

    Add Cream and Butter

    Once the polenta is cooked, stir in the heavy cream, butter, salt, and black pepper. Cook for another 5 minutes until creamy. Set aside.

Cooking the Mushrooms

    Sauté the Mushrooms

    In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute. Add the mushrooms, thyme, salt, and black pepper. Cook for about 5-7 minutes until the mushrooms are golden brown and tender.

Cooking the Eggs

    Fry the Eggs

    In a non-stick skillet, cook the hen eggs to your desired doneness. Season with salt and black pepper.

Preparing the Chicken Jus

    Make the Chicken Jus

    In a saucepan, bring the chicken stock to a simmer. Reduce it to about half its volume. Stir in butter, salt, and pepper. Keep warm.

Assembly

    Plate the Dish

    To serve, spoon the creamy polenta onto plates, top with sautéed mushrooms, and place a fried egg on each. Drizzle the chicken jus around the plate.
