Making Cavatelli

    Prepare the Dough

    In a large bowl, mix the all-purpose flour and semolina flour. Make a well in the center and add the egg and water. Mix until a rough dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Shape the Cavatelli

    Divide the dough into small pieces. Roll each piece into a rope about 1/2 inch thick. Cut into 1-inch pieces, then use a fork to press and shape each piece to form a cavatelli.

Making Vegetable Ragu

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the onion, carrot, and celery; sauté for 5 minutes until softened.

    Add Remaining Vegetables

    Stir in the zucchini, bell pepper, and garlic, cooking for another 5 minutes.

    Simmer the Ragu

    Add the canned tomatoes, fresh basil, salt, and pepper. Bring to a simmer and cook for about 15-20 minutes until thickened.

Combining and Serving

    Cook Cavatelli

    In a large pot of boiling salted water, cook the cavatelli for about 2-3 minutes or until they float to the surface. Drain.

    Combine and Serve

    Toss the cooked cavatelli with the vegetable ragu. Serve topped with crumbled ricotta salata and toasted pine nuts.
