Beef Prosciutto Preparation

Curing the Beef
Mix kosher salt, black pepper, dried thyme, garlic powder, and curing salt. Rub the mixture thoroughly over the beef. Wrap in cheesecloth and refrigerate for at least 2 weeks.

Slicing the Prosciutto
After curing, remove the beef from the fridge, rinse off the salt mixture, and slice thinly using a sharp knife.
Risotto Preparation

Cooking the Risotto
In a saucepan, heat chicken broth and keep it warm. In a large pan, melt butter over medium heat, add shallots and garlic, sauté until translucent. Add Arborio rice, stirring for 1-2 minutes until slightly toasted. Pour in white wine, stirring until absorbed. Gradually add warm broth, one ladle at a time, stirring frequently until rice is creamy and al dente.

Finishing the Risotto
Stir in grated Parmesan cheese and season with salt and black pepper to taste. Remove from heat and cover to keep warm.

Plating the Dish
Spoon a generous portion of UNI risotto onto the plate. Top with slices of beef prosciutto and carefully place fresh sea urchin on top. Garnish with lemon zest and chives.
