Prepare the Potatoes
Wash and scrub the Uncle Nick's potatoes thoroughly. Cut them into wedges.

Cook the Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the potato wedges, season with salt and pepper, and cook for about 15-20 minutes, turning occasionally until they are golden brown and tender. Remove from heat and set aside.

Cook the Steak
While the potatoes are cooking, season the steaks with salt and black pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or longer for your desired doneness. Remove from heat and let rest for 5 minutes.

Assemble the Dish
On a plate, layer the cooked potato wedges, top with the steak slices, and place the eggs on top. Drizzle with pesto and garnish with fresh parsley.
