Prepare the Strawberries
Wash the strawberries gently under cold water and pat them dry with paper towels. Ensure they are completely dry, as water can cause the chocolate to seize.

Melt the Chocolate
In a microwave-safe bowl, combine the Ghirardelli semi-sweet chocolate chips and the coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. This should take about 1-2 minutes.

Dip the Strawberries
Hold each strawberry by the green stem and dip it into the melted chocolate, allowing any excess chocolate to drip off. Place the dipped strawberry onto a parchment-lined baking sheet.

Optional White Chocolate Drizzle
If using, melt the white chocolate chips in a similar manner to the semi-sweet chocolate. Once melted, use a fork or piping bag to drizzle the white chocolate over the dipped strawberries for decoration.

Set and Serve
Refrigerate the chocolate-covered strawberries for at least 30 minutes to allow the chocolate to set. Once set, serve immediately or store in an airtight container in the refrigerator for up to 2 days.
