Preparing the Corn Tortillas
Heat the vegetable oil in a large skillet over medium heat. Once hot, gently place the corn tortillas in the oil, frying them until they are crispy and golden brown, about 2-3 minutes per side. Remove the tortillas and place them on paper towels to drain excess oil. Season lightly with salt while they are still hot.

Braised Short Ribs
If you haven't already prepared the braised short ribs, season them with salt and pepper, then sear in a hot skillet until browned on all sides. Add your choice of braising liquid (like beef broth, red wine, and aromatics) and simmer for 2-3 hours until tender. Shred the meat and set aside.

Assemble the Tostadas
On each crispy tortilla, layer approximately 1/4 cup of the braised short ribs, followed by a few tablespoons of pickled onions. Sprinkle a generous amount of grated Parmesan cheese over the top and finish with a sprinkle of chopped cilantro.

Serve the tostadas immediately while they are still crispy. Enjoy!
