Prepare the Mushrooms
Preheat your oven to 400°F (200°C). On a baking sheet, toss the sliced mushrooms with olive oil, minced garlic, salt, and black pepper. Spread them out evenly and roast in the oven for about 20 minutes until golden and tender.

Make the Red Sauce
In a saucepan over medium heat, combine the canned tomato sauce, chopped chipotle peppers, cumin, and lime juice. Stir well and simmer for about 10 minutes until heated through and flavors meld together.

Layer the Chilaquiles
In a large serving dish, layer half of the corn tortilla chips at the bottom. Spoon half of the roasted mushrooms on top, then drizzle half of the red sauce over everything. Repeat the layering with the remaining chips, mushrooms, and sauce.

Top the layered chilaquiles with shredded cheese, roasted red peppers, sliced avocado, and a generous dollop of sour cream.
