Mushrooms Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Mushrooms

    Clean the portobello mushrooms with a damp cloth and remove the stems. Cut them into thick slices (about 1/2 inch thick).

    Season the Mushrooms

    In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and paprika. Add the mushroom slices and toss until they are evenly coated.

    Bake the Mushrooms

    Spread the seasoned mushroom slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until they are crispy and golden brown, flipping halfway through.

Smoked Jalapeño Sauce Preparation

    Prepare the Jalapeños

    Roast the jalapeños over an open flame or under a broiler until the skin is charred. Allow them to cool, then peel off the skin and remove the seeds.

    Blend the Sauce

    In a blender, combine the roasted jalapeños, smoked paprika, garlic cloves, olive oil, lime juice, and honey. Blend until smooth. Adjust the salt to taste.

    Once the mushroom fries are done baking, remove them from the oven and serve hot with the smoked jalapeño sauce on the side.
