Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves.

In a large bowl, toss the trimmed Brussels sprouts with the olive oil, salt, and black pepper until well coated.

Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, shaking the pan halfway through.

Make the Maple Butter
In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the maple syrup, cinnamon, and nutmeg. Stir until well combined and simmer for 2-3 minutes until slightly thickened.

In a separate small pan, toast the pecans over medium heat for about 5 minutes until fragrant. Add 1 tablespoon of maple syrup to the pecans, stirring constantly until they are coated and the syrup caramelizes slightly. Remove from heat.
