Tomato Jam Preparation

    Prepare the Tomatoes

    Wash the heirloom tomatoes thoroughly. Remove the stems and chop them into small pieces.

    Cook the Jam

    In a large saucepan, combine the chopped heirloom tomatoes, granulated sugar, apple cider vinegar, minced garlic (mince by chopping finely), salt, and black pepper. Bring to a boil over medium heat, stirring frequently.

    Simmer the Mixture

    Once boiling, reduce the heat to low and allow the mixture to simmer uncovered for about 45-60 minutes, stirring occasionally. The mixture should thicken and become jam-like.

    Add Fresh Basil

    In the last 10 minutes of cooking, stir in the fresh basil leaves. Once the jam is thickened and the flavors have melded, remove from heat.

    Cool and Store

    Allow the tomato jam to cool to room temperature before transferring it to an airtight container. Refrigerate until ready to use.
