Cooking Instructions
- 1
Prepare the Lobster
If using whole lobsters, cook them in boiling water for about 8-10 minutes until they turn bright red. Remove from water, let cool, and then extract the meat, chopping it into bite-sized pieces.
- 2
Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 3
Make the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and red chili flakes, cooking until fragrant. Stir in the crushed tomatoes, salt, and black pepper. Let it simmer for about 10 minutes.
- 4
Combine Lobster and Sauce
Add the cooked lobster meat to the sauce and stir well. If the sauce is too thick, add reserved pasta water, a little at a time, to reach desired consistency.
- 5
Mix with Spaghetti
Add the drained spaghetti to the skillet, tossing to coat the pasta evenly with the sauce. Stir in chopped parsley and lemon zest.
- 6
- 7
Serve
Plate the spaghetti and sauce, topping each serving with toasted bread crumbs and a generous sprinkle of grated bottarga.
