Brine the Chicken
In a bowl, combine buttermilk, dill weed, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best flavor.
Prepare the Coating
In a shallow dish, mix together flour, paprika, and a pinch of salt and pepper.
Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking (about 350°F/175°C).
Coat and Fry the Chicken
Remove chicken from the brine, allowing excess liquid to drip off. Dredge the chicken in the flour mixture, pressing it onto the surface. Carefully place the coated chicken into the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from oil and place on paper towels to drain.
Assemble the Sandwich
Spread mayonnaise on the bottom half of each bun. Add fried chicken, followed by lettuce and dill pickle slices. Top with the other half of the bun.
