In a large bowl, combine ground chuck, ground ribeye, and ground brisket. Add salt and black pepper, mixing gently until just combined.
Divide the meat mixture into 4 equal portions and shape them into patties, making a slight indentation in the center of each.
Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.
In the last minute of cooking, place a slice of white American cheese on each patty and cover to melt.
While the patties are cooking, toast the egg buns on the grill or in a toaster until golden brown.
Place each patty on the bottom half of the toasted bun. Top with lettuce, tomato slices, and onion rings. Finish with the top half of the bun.
