Prepare the Filling
In a mixing bowl, combine the cream cheese, smoked salmon (chopped into small pieces), capers, and everything bagel spice. Mix until well combined and smooth.

Assemble the Wontons
Place a wonton wrapper on a clean surface. Spoon about a teaspoon of the filling into the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a triangle, and press the edges to seal. Repeat with the remaining wrappers and filling.

Cook the Wontons
You can either deep-fry or pan-fry the wontons. For deep-frying, heat oil in a deep pan to 350°F (175°C) and fry the wontons until golden brown, about 2-3 minutes. For pan-frying, heat a tablespoon of oil in a skillet over medium heat and cook the wontons until golden and crispy on both sides.

Serve
Drain the cooked wontons on paper towels and serve warm with a side of sweet and sour sauce for dipping.
