Prepare the Pork Chops

Season the pork chops with olive oil, salt, pepper, and garlic powder. Let them marinate for at least 30 minutes.

Cook the Pork Chops

Heat a skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown and cooked through. Let rest.

Cook the Polenta

In a pot, bring water to a boil. Gradually whisk in the polenta, stirring continuously to avoid lumps. Reduce heat to low.

Finish the Polenta

Cook for about 30 minutes until thickened. Stir in smoked cheddar, butter, and salt until melted and combined.

Braised Collard Greens

Sauté the Onions and Garlic

In a large pot, heat olive oil over medium heat. Add diced onions and cook until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

Add chopped collard greens and chicken broth. Season with salt and pepper. Cover and simmer for 30-40 minutes until greens are tender.

In a small bowl, mix dried figs, honey, Dijon mustard, apple cider vinegar, and a pinch of salt until well combined. Let sit for at least 15 minutes to meld flavors.
