Prepare the Falafel Mixture

In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Blend until a coarse mixture forms, scraping down the sides as needed.

Shape the Falafel

Scoop out the mixture and form small balls or patties, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

Chill the Falafel

Refrigerate the formed falafel for at least 30 minutes to help them hold their shape during cooking.

Cook the Falafel

In a large skillet, heat olive oil over medium heat. Fry the falafel in batches until golden brown and crispy on all sides, about 3-4 minutes per side.

Serve

Serve the falafel warm with tzatziki, za’atar, chopped kale, sliced peppers, and kalamata olives on the side.
