    Boil the Eggs

    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit for 12 minutes. Then, transfer the eggs to an ice bath to cool.

    Prepare the Filling

    Once the eggs are cooled, peel them and cut in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, mustard, giardiniera, mortadella, piquillo peppers, black olives, salt, and black pepper to the yolks. Mash everything together until smooth.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves.

    Garnish and Serve

    Sprinkle paprika and chopped parsley on top for garnish. Serve chilled or at room temperature.
