Prepare the Chicken
In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and black pepper. Add minced garlic to the skillet.
Cook the Chicken
Once the garlic is fragrant, add the chicken breasts. Cook for 6-7 minutes on each side, or until fully cooked through and golden brown. Remove from heat and let rest.
Assemble the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, and diced cucumber. Drizzle with balsamic vinegar and toss to combine.

Cook the Quinoa
In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
Prepare the Vegetables
While the quinoa is cooking, dice the bell pepper and chop the green onions.
Mix the Quinoa
Once quinoa is cooked, fluff with a fork. Stir in the diced bell pepper, chopped green onions, lemon juice, and chopped parsley.
Dessert
Prepare the Apples
Core and slice the apples into wedges. In a small bowl, mix brown sugar and cinnamon.
Cook the Apples
In a skillet, melt butter over medium heat. Add apple wedges and sprinkle with brown sugar mixture. Cook until apples are tender, about 5-7 minutes.
Serve the Dessert
Serve warm as a delicious finish to your lunch.
