    Prepare the Vegetables

    Wash and chop all the vegetables into bite-sized pieces. Make sure the broccoli is cut into florets, the bell peppers are sliced, and the carrot is julienned.

    Make the Sauce

    In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, cornstarch, and water until well combined. Set aside.

    Heat the Pan

    In a large skillet or wok, heat a tablespoon of oil (vegetable or canola) over medium-high heat until shimmering.

    Stir-fry the Vegetables

    Add the sliced onion, minced garlic, and grated ginger to the pan. Sauté for about 1 minute until fragrant. Then, add the bell peppers, broccoli, carrots, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.

    Add the Sauce

    Pour the sauce mixture over the stir-fried vegetables and toss to coat evenly. Cook for an additional 1-2 minutes until the sauce thickens and the vegetables are fully coated.

    Serve

    Remove from heat and transfer the stir-fry to a serving dish. Garnish with sesame seeds and sliced green onions before serving.
