Season the Steak
Pat the aged beef steaks dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Let the steaks sit at room temperature for 30 minutes before cooking.

Add Aromatics
Add garlic cloves and fresh rosemary to the skillet. Cook for another 4-5 minutes, basting the steaks with the pan juices using a spoon.

Check for Doneness
Using a meat thermometer, check the internal temperature. For medium-rare, aim for 130°F (54°C). Remove the steaks from the skillet and let them rest for 5-10 minutes.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips (about 1/4 inch thick).

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a clean towel.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Season and Bake
In a large bowl, toss the dried potato strips with olive oil, salt, and paprika. Spread them in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
