Main Dish

Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Mix well to create the marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Grilling

  1. 3

    Prepare the Grill

Preheat the grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and covered with white ash.

  2. 4

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the fish flakes easily with a fork.

  3. 5

    Prepare the Vegetables

While the salmon is grilling, cut the zucchini and bell peppers into strips. Toss the vegetables with olive oil, salt, and black pepper in a bowl.

  4. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill. Grill for about 4-5 minutes, turning occasionally until tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill and let them rest for a few minutes. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 8

    Garnish (optional)

Garnish with fresh herbs or lemon wedges if desired.
