    Prepare the Onions

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and sauté until they are caramelized, about 15-20 minutes. Stir occasionally and season with salt and pepper.

    Cook the Steak

    Season the ribeye steak with salt and pepper. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the steak to your preferred doneness, about 4-5 minutes per side for medium rare. Remove from heat and let it rest for a few minutes before slicing.

    Toast the Garlic Bread

    While the steak is resting, toast the garlic bread slices in the oven or on a grill until golden brown.

    Assemble the Sandwich

    Spread a layer of chipotle mayo on each slice of toasted garlic bread. Place the sliced steak on top, followed by the caramelized onions. Add a slice of cheese on each sandwich and place under the broiler for 1-2 minutes until the cheese is melted.

    Garnish with fresh parsley if desired, slice into halves or quarters, and serve immediately.
