    Prepare the broth

    In a pot, heat 1 tablespoon of olive oil over medium heat. Add diced Vidalia onion and sauté until translucent. Add the oyster mushrooms and cook for another 3-4 minutes. Pour in 4 cups of water and bring to a simmer. Season with salt and black pepper. Let it simmer for about 15 minutes.

    Cook the Swiss chard

    In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the Swiss chard and sauté for about 5 minutes until wilted. Season with salt and pepper to taste. Set aside.

    Cook the salmon

    In the same pan used for the Swiss chard, place the salmon fillets skin-side down. Cook over medium-high heat for about 4-5 minutes, then flip and cook for an additional 3-4 minutes until cooked through and flaky.

    Serve

    Ladle the smoked tomato broth into bowls, place the sautéed Swiss chard in the center, and top with the cooked salmon. Garnish with additional oyster mushrooms if desired.
