Oysters Preparation

Shucking the Oysters
Carefully shuck the oysters using an oyster knife. Rinse them under cold water to remove any grit. Place them on a serving platter with ice.

Cooking the Shrimp
Bring a small pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and place in an ice bath to stop the cooking process. Drain and set aside.

Plating the Tuna Tartare
Using a ring mold or a small bowl, pack the tuna tartare mixture into a neat shape on a serving dish. Remove the mold carefully and drizzle with additional sesame oil if desired.
Salmon Tiradito Preparation

Preparing the Salmon
In a bowl, combine the thinly sliced salmon with lime juice, cilantro, aji amarillo paste, olive oil, salt, and pepper. Toss gently to coat the salmon evenly.

Arrange the salmon slices on a serving plate in a single layer. Drizzle with extra lime juice and olive oil before serving.
