Method
Prepare Fruits
Wash and Cut Fruits
Wash the strawberries, blueberries, and apple slices under cold water. Hull and slice the strawberries, and cut the apples into thin slices. Peel and slice the bananas into rounds.
Make Pancakes
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well mixed.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; some lumps are okay.
Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
Keep Warm
Keep cooked pancakes warm in a low oven while you cook the remaining pancakes.
