Method

Preparing the Shrimp

    Boil the Shrimp

    In a large pot, bring 4 cups of water to a boil. Add the sliced lemon and Old Bay seasoning.

    Cook the Shrimp

    Once the water is boiling, add the shrimp and cook for about 2-3 minutes or until they turn pink and opaque. Do not overcook.

    Chill the Shrimp

    Remove the shrimp from the pot and place them in a bowl of ice water to stop the cooking process. Once cooled, drain and refrigerate.

Making the Sauces

    Prepare the Cocktail Sauce

    In a bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce if desired. Mix well and refrigerate until ready to serve.

    Prepare the Mignonette Sauce

    In a small bowl, mix red wine vinegar, finely diced shallots, and freshly ground black pepper. Let it sit for at least 15 minutes to allow flavors to meld.

    Prepare the Spicy Mayo

    In another bowl, combine mayonnaise, Sriracha sauce, and lemon juice. Mix thoroughly and refrigerate until serving.

Serving

    Plate the Shrimp

    Arrange the chilled shrimp on a platter. Serve with the cocktail sauce, mignonette sauce, and spicy mayo on the side.
