Main Ingredients

Method

Preparation

  1. 1

    Clean the Clams

Rinse the clams under cold running water to remove any sand or grit. Soak them in a bowl of salted water for about 20 minutes to help them purge any remaining sand.

  2. 2

    Mince the Garlic

Peel and finely mince the garlic cloves. Set aside.

  3. 3

    Chop the Parsley

Rinse and chop the fresh parsley. Set aside for garnish.

Cooking

  1. 4

    Heat the Oil and Butter

In a large pot or Dutch oven, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat until melted and bubbly.

  2. 5

    Sauté the Garlic

Add the minced garlic to the pot and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  3. 6

    Add the Clams

Add the cleaned clams to the pot and stir to coat them with the garlic mixture.

  4. 7

    Pour in the Wine

Pour in 1 cup of white wine and sprinkle with red pepper flakes, salt, and black pepper. Stir to combine.

  5. 8

    Cook the Clams

Cover the pot and cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  6. 9

    Serve

Remove from heat, stir in the chopped parsley, and serve immediately in bowls with the broth. Enjoy!
