Preparing the Cake Batter

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Alternatively, you can melt them in the microwave in 30-second intervals, stirring in between.

Mix in Sugar
Once melted, remove the bowl from heat and whisk in the granulated sugar until fully combined.

Add Eggs and Yolks
Add the large eggs and large egg yolks to the chocolate mixture. Whisk until the mixture is smooth and glossy.

Incorporate Flour and Salt
Sift in the all-purpose flour and add a pinch of salt. Gently fold the flour into the mixture until just combined. Do not overmix.

Baking the Cake

Fill Ramekins
Divide the cake batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes.
Serving

Invert and Serve
Carefully run a knife around the edges of each cake to loosen. Invert onto a plate and gently lift off the ramekin. Serve immediately with a scoop of vanilla ice cream on the side.
