Method
Ravioli Preparation
- 1
Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead the dough for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
- 2
Prepare the Filling
In a skillet over medium heat, cook the ground wild boar until browned. Add garlic, parsley, Parmesan cheese, salt, and pepper. Mix well and remove from heat. Allow to cool.
- 3
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece to about 1/16 inch thick using a pasta machine or rolling pin.
- 4
Fill the Ravioli
Place small spoonfuls of the wild boar filling onto half of the rolled-out dough. Fold the other half over and press to seal, making sure to remove any air pockets.
Sauce Preparation
- 5
Cook the Clams
In a large skillet, heat olive oil over medium heat. Add shallots and sauté until translucent. Pour in the white wine and bring to a simmer. Add the Manila clams and cook until they open, about 5-7 minutes.
- 6
Add Tomatoes
Stir in the diced yellow tomatoes and season with salt and pepper. Cook for an additional 5-10 minutes until the sauce thickens slightly. Add fresh basil before serving.
Combine and Serve
- 7
Cook the Ravioli
In a large pot of boiling salted water, cook the ravioli for about 3-4 minutes until they float to the top. Drain and gently toss with the yellow tomato sauce.
- 8
Plate the Dish
Serve the ravioli topped with the clam sauce, garnished with additional fresh basil and grated Parmesan cheese if desired.
