Prepare the Whipped Mascarpone

In a mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip using a hand mixer or stand mixer until soft peaks form. Set aside.

Winter Squash Caponata

Make the Caponata

Heat the olive oil in a skillet over medium heat. Add the diced onion and garlic, cooking until soft. Stir in the diced winter squash, balsamic vinegar, oregano, salt, and pepper. Cook for about 15-20 minutes or until the squash is tender. Remove from heat and let cool slightly.

Slice the focaccia loaf into thick slices and toast until golden brown.
