Make the Dough

In a large mixing bowl, combine flour, sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg and white wine, mixing until a dough forms. Knead for a few minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll and Cut the Shells

On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles using a 4-inch cutter. Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

Fry the Shells

Heat the oil in a deep frying pan over medium heat. Fry the wrapped dough until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.

Prepare the Filling

In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, candied orange peel, and dark chocolate chips. Mix until smooth and creamy.

Fill the Shells

Once the shells are completely cool, use a piping bag to fill each shell with the ricotta filling. Dust with additional powdered sugar before serving.
