Pudding Preparation

    Prepare Dates

    In a bowl, combine pitted dates and boiling water. Let them sit for 10 minutes to soften.

    Mix the Batter

    In a separate bowl, cream together the butter and brown sugar until light and fluffy. Add eggs one at a time, then stir in the softened dates and vanilla extract.

    In another bowl, mix flour, baking powder, and baking soda.

    Gradually fold the dry ingredients into the wet mixture until just combined. Pour into a greased baking dish.

    Bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until a skewer comes out clean.

Toffee Sauce Preparation

    In a saucepan, melt the butter and brown sugar over medium heat. Stir until dissolved, then add cream and let it simmer for a few minutes until thickened.

Mascarpone Cream Preparation

    In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Assembly

    Cut a piece of sticky toffee pudding and place it on a plate. Drizzle with toffee sauce, add a dollop of mascarpone cream, and garnish with cranberries.
